This is a quick and easy fried rice using green beans and carrot. The green beans and the brown rice goes well together. It is healthy and fulfilling as well. You can serve the rice on its own or with fried fish.
Fried Rice
Prep time: 10 minutes
Cook time: 20 minutes
Serves 3
Ingredients
- 3 tablespoon coconut oil
- 1 medium onion thinly sliced
- 1 teaspoon garlic crushed
- 1/2 teaspoon grated ginger
- 1/2 teaspoon fresh turmeric grated or 1/4 teaspoon ground turmeric
- 1 sprig curry leaves thinly sliced
- 2 green chillies thinly sliced
- 220 grams fresh green beans thinly sliced
- 1/2 cup grated carrot
- 1/2 teaspoon ground cumin
- 2 cups cooked brown rice
- 1/4 teaspoon salt
- 1 tablespoon tamari
Method
- Heat the oil in a medium sized non-stick pan or wok.
- Fry the onion, garlic, ginger, turmeric, curry leaves and chillies until lightly golden.
- Add the beans, carrots and cumin and salt and stir fry them about 5 minutes or until the beans are cooked but with a slight crunch.
- Add the rice to the pan and continue stirring until the rice is heated through.
- Add the tamari and stir fry for 1 minute.
- Serve on its own or with fried fish.
Fried fish (fresh tuna)
Prep time: 10 minutes
Cook time: 10 minutes
Serves 3
Ingredients:
- 250 gram fresh tuna thinly sliced
- 1/2 teaspoon vegeta or vegetable stock powder
- 1/2 teaspoon salt
For the batter:
- 1 tablespoon flour
- 1 tablespoon Kashmiri chilli powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/3 cup water
Method
- Heat 2/3 cups of sunflower oil or vegetable oil in a small non-stick frying pan.
- Coat the fish with the salt and Vegeta (vegetable stock powder) if using.
- In a bowl whisk all the batter ingredients.
- Dip the fish slices in the batter and fry the tuna slices until crispy and golden brown on both sides. Drain on paper towel.
- Serve warm with the fried rice.
